Pumpkin Recipes & Such

Ingredients

2 pounds ground beef
1 large yellow onion, diced
1 green bell pepper, diced
1 tsp. chili powder
1 tsp. sugar
2 (15 ounce) cans chili beans, drained
1 (46 ounce) can tomato juice (or beef broth)
2 (28 ounce) cans diced or stewed tomatoes with juice
1 cup canned pumpkin puree
1 tbsp. pumpkin pie spice

Directions
  1. In a large pot over medium heat, brown the beef; drain.
  2. Add the bell pepper and onion and bell pepper. Cook until softened, about 5-7 minutes.
  3. Add the remaining ingredients and stir.
  4. Simmer 1 hour.

Having pumpkin in the fall is practically a rite of passage in order to start the season, but many desserts are a little too fattening. The following recipes are both lower in fat and calories and delicious ways to enjoy pumpkin.

Pumpkin Cake with Cranberries

This healthy pumpkin dessert is provided by Eating Well.com. It is a great way to have a pumpkin cake with all the added calories. This simple recipe use basic ingredients for cake, including flour, baking soda, baking powder, and salt. The seasonings are ground cinnamon and allspice to give it that seasonal flavor and it uses egg whites instead of regular eggs. You will also add pumpkin puree to the cake. Continue reading

Ingredients

4 cups pumpkin seeds
1/2 cup butter
2 tbsp. brown sugar
1 tbsp. ground cinnamon
1/4 tsp. salt
1/4 cup granulated sugar

Directions
  1. Preheat oven to 350 degrees.
  2. In a microwave safe bowl, melt the butter. Add the pumpkin seeds, brown sugar, cinnamon and salt. Stir to coat the seeds.
  3. Cover a cookie sheet with parchment paper. Spread the seed mix evenly and thin to allow seeds to cook evenly.
  4. Bake for 30 minutes, stirring once after 15 minutes.
  5. Remove from oven and sprinkle 1/2 of the granulated sugar over the seeds; stir to coat. Return to oven and bake for 15 minutes more.
  6. Sprinkle with remaining sugar, stir and bake for a final 15 minutes.
