A site for my favorite season!

If it is the holiday season and you want to make freezer meals that resemble Thanksgiving foods leading up to the main course, there are a lot to choose from.

Don’t assume that freezer meals have to be filled with all those ingredients you can no longer have, because there are a lot of delicious and seasonal meals that are freezer-friendly and fit in within your whole food lifestyle. Here are just a few of the better ones for the Thanksgiving and holiday season.

Roasted Green Beans

When you want a vegetable side that is so delicious it tastes more like a main course, consider making these roasted green beans. They can be frozen and have a lot of great herbs and spices used to cook them. Put them in a smaller square casserole dish and save the big dishes for your main course.

You can also bake them, then add them to a big dish with chicken or ham that you intend to eat them with. For the roasted green beans, you will add olive oil, salt and pepper, Italian seasoning, and any other herbs you want. You also want to use quite a bit of garlic to make them extra flavorful. You can put them in a freezer bag as well.

Chicken Salad with Nuts and Fruit

For a lunch-inspired freezer meal, you can prepare a dish of chicken salad and save it for future lunches. This is good to make ahead of time when you are busy during the holidays and find it difficult to make whole food lunches every single day. This chicken salad is both whole foods and paleo-approved without using any mayonnaise. Instead you will use some avocado, lemon juice, and Dijon mustard to prepare the chicken salad. You can add any raw nuts you like, though almonds and pecans are common to use. Choose dried fruit like apricots to add to the chicken salad.

Butternut Squash and Chicken

This is a main course that includes your chicken and veggies all rolled into one. Not only is it cook for any time during the fall, but can be incorporated into a lunch or dinner whenever butternut squash is available. Along with using boneless chicken breasts, the casserole also calls for butternut squash and acorn squash, kale, onion, coconut oil, and lots of great seasonings.

Stuffed Acorn Squash

Since squash is so popular during the fall season, it makes sense that you would want to prepare a stuffed acorn squash. This squash is cooked to be soft and tender, and includes beef with cinnamon and other fall spices.
