Pumpkin oat waffles contain extra flavor and fiber for healthy digestion and as a hearty and filling breakfast, lunch or snack. Warming spices bring flavor and health benefits!
Ingredients
2 cups oat flour
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg (okay to mix and match with cloves, or omit some spices if you don’t have them handy)
2 Tb brown sugar (or 1 Tb molasses, 1 Tb white sugar)
4 tsp baking powder
Pinch of salt
1 cup half and half
½ cup pureed pumpkin
1 tsp vanilla
2 eggs
2 Tb melted butter
Directions
Sift together flour, spices, salt and baking powder. Combine pumpkin puree, brown sugar, eggs, melted butter and vanilla. Add wet ingredients to the flour mixture, and stir well.
Oil and heat up waffle iron. When indicator light glows ready, drop about the batter on to each waffle section. Pumpkin waffles will take a bit longer to cook than regular waffles. Let them sizzle on the griddle for about four minutes before carefully checking.
Continue cooking for several minutes more, as needed, until they easily separate from the waffle iron. Use a fork to gentle jiggle them free, then stack with pats of butter between.
Plate and serve with your favorite topping, or freeze for single use, heated in the toaster.
